Ethylene diamine tetraacetic acid (chemical formula C10H16N2O8 ) exist as a colorless crystalline individual at room temperature. It is also known as EDTA or Edatic acid.
It has the property of binding to and forming complexes with metal ions that affect the product. Since it sequesters metal ions, it works to prevent the inherent reaction between metal ions and other components. Sequestration of metal ions is called chelate, and ethylenediaminetetraacetic acid creates many metal ions and stable water-soluble chelate compounds.
Ethylene diamine tetraacetic acid is used primarily as a chelating agent in a variety of fields.
Oxidation often occurs in rubber, vegetable oils, and foods due to the catalytic action of trace amounts of metal ions. It is used as in this case as an anti-oxidant.
In the pharmaceutical field, it is used to maintain the properties of drugs that prevent blood coagulation, antibiotics, antihistamines, and local anesthetics.
