Perillaldehyde is a clear colorless or light brown liquid organic compound with a characteristic odor, predominantly found in Perilla frutescens (shiso). Its CAS registration number is 2111-75-3.
Primarily used as a flavoring agent in foods, perillaldehyde is also an essential oil extracted from natural Perilla frutescens. It is known for its antibacterial properties and is used as a therapeutic agent with anti-inflammatory effects.
Perillaldehyde has a boiling point of 237°C, a density of 0.953 g/cm3, and is miscible with methanol and ethanol but insoluble in water. Perillaldehyde has two mirror-image isomers, with the (4S)-form (or (-)-Perillaldehyde) found in shiso.
