■Summary

Zymosnap ALP measures alkaline phosphatase activity in dairy products to verify pasteurization. Clear final results avoid retesting delays and additional costs associated with other ALP testing methods. Validated for various types of milk, flavored milk, cream, etc. You can get results in about 5 minutes.

■ Reasons for testing alkaline phosphatase in the dairy industry

Alkaline phosphatase (ALP) is an enzyme naturally present in all raw milk. During pasteurization this enzyme is inactivated to an acceptable level. This value varies depending on the type of pasteurized milk. <350 mU/L for cow's milk (ISO Standard 11816-1), <300 mU/L for goat's milk, and <500 mU/L for sheep's milk. Therefore, ALP measurements above these levels are considered to indicate a serious problem with the pasteurization process. Because ALP is more heat stable than most pathogens, ALP also serves as an overall product indicator. Add the sample into the Zymosnap container and release the detection reagent at the top of the kit. After incubating at 37°C for 5 minutes, detect the reaction light using a Hygina luminometer. After 15 seconds it will be displayed as a pass, caution, or fail reading.
