About This Product

■Improving the quality and yield of ham production by softening the knife

GEA MultiCarve is a rotating knife tenderizer that uses two rotating knife rollers to cut the surface of boneless meat. This action effectively increases the surface area of ​​the product, leading to more effective protein extraction and better binding. Increased surface and protein extraction improves brine distribution and retention during the tumbling process. It also reduces curing time after brine injection. For ultimate performance, this system works in conjunction with the GEA MultiJector brine injection system. It can also operate as a standalone unit.

■Main uses

The GEA MultiCarve knife tenderizer is ideal for cooked ham and cooked/sliced ​​chicken products.

■Advanced process control

・The height and pressure of the roller can be adjusted to suit different parts of meat. ・The speed of the top roller can be adjusted to improve carving performance on the meat surface. - Narrow horizontal flow for customized softening action of each piece

・Quick and easy changeover of rollers allows high productivity and quick changeover between recipes - Dedicated trolley for one operator to remove rollers, no crane or hoist required ・Collect and recycle brine during the entire process to reduce losses
