◼︎Effects of shock freezer
In quick freezing, by passing through the "maximum ice crystal formation temperature range" of 0°C to -5°C more quickly, water turns into fine ice crystals, making it possible to freeze food without destroying its structure. Although there are differences depending on the product, if you store it at -18℃, you can maintain its quality for a long time.

However, in slow freezing, the freezing temperature of the cells that form the food and the water contained in the food are different, so the water that freezes first causes capillary action and becomes a large block of ice, destroying the cells of the food. The water, cells, and fats and oils separate, and the texture and flavor, which are important for sweets, are lost. Angel's shock freezer solves these problems.

In addition, Angel's shock freezer has a high freezing ability that eliminates the difference between the surface temperature and the center temperature of the product when frozen, thereby preventing dryness in the center of the sponge and sinking of the mousse. One of its functions is a linear thermosensor.
