About This Product

Japan's first gondola system provides overwhelming processing speed and high freezing quality. This is a continuous liquid freezing device that achieves high-quality freezing with extremely little dripping during thawing at high speed and through large-volume processing. It has low running costs and labor savings, and can be introduced in a space-saving manner at a low cost.

■High efficiency & labor saving

Simply place the resin container containing the product onto the gondola. The frozen gondola container can be moved directly to the freezer, making it highly efficient and labor-saving.

■Stable freezing temperature and low running costs

Each gondola, which houses stacked resin containers, moves through a freezing tank containing an ethanol formulation solution while being immersed in water. A stirrer inside the tank causes convection of the solvent to stabilize the temperature inside the tank and improve refrigeration efficiency. In addition, to reduce the loss of ethanol solution, the liquid is drained at the outlet using a slit nozzle and air blow.

■Improvement of freezing quality

Compared to the air blast method, which destroys cells due to the slow passage through the ice crystal formation zone, freezing with a liquid that has an overwhelmingly high thermal conductivity results in minimal cell destruction due to ice crystals. Drips are reduced by greatly preventing cell destruction during freezing, which is the biggest factor in deterioration of material and flavor during cryopreservation, and it is possible to thaw with quality close to fresh in both color and flavor. It is possible to freeze high-quality fresh fish, sashimi, fried foods, grilled foods, IQF fruits and agricultural products, and a variety of other foods.
